“Reese’s” Almond Butter Cups

Ingredients:
Makes 12 Almond Butter Cups

Directions:

  • Use muffin liners as if making muffins in a muffin tray.
  • Place 1/2 cup chocolate chips in a bowl placed atop a pot of boiling water. Stir gently. This will melt your chocolate.
  • Distribute a small spoon of melted chocolate in each muffin liner. Use knife to spread evenly.
  • Allow to cool and harden in refrigerator for minimum 15 minutes.
  • Melt remaining chocolate, and cover each cup completely. Again, lightly use a knife to spread evenly.
  • Optional: place 1 or 2 almonds on top of each cup.
  • Place cups in refrigerator for minimum 30 minutes. Once hardened and cooled, remove muffin liners, and relish in the delicacy of this home-cooked healthy treat.

Chewy Chocolate Chip Cookies

Ingredients:

  • 1 egg
  • 1/4 cup honey
  • 3 tbsp grass-fed butter, softened
  • 1 tsp vanilla
  • 1 1/2 cups almond flour
  • 1/2 cup shredded unsweetened coconut flakes
  • 1 tsp baking soda
  • 1/4 tsp sea salt
  • 1/2 cup Enjoy Life chocolate chips

Directions:

  1. Preheat oven to 350.
  2. Whisk together egg, honey, butter, and vanilla in a large bowl.
  3. In a separate bowl, combine almond flour, coconut, baking soda, and salt.
  4. Slowly add dry ingredients to wet until all are well incorporated.
  5. Stir in chocolate chips.
  6. Spoon heaping tablespoons of batter onto a baking sheet lined with parchment paper, leaving plenty of room between each.
  7. Bake for 10-12 minutes, or until cookies begin to brown on top.
  8. Let cool on baking sheet for 10 minutes, then remove to wire rack to cool completely.
  9. Eat!

So I did some research and found out that this grass, known as wheatgrass is extremely healthy for you and by taking just one small shot of wheatgrass juice every now and then, you can benefit your health tremendously.

Wheatgrass is one of the most potently healthy substances on earth and you’ll feel a change in your health just after a few weeks of taking it. One shot of wheatgrass contains about 1kg of leafy green vegetables, over 90 minerals and essential enzymes. It’s a powerful detoxifier for the liver and blood, and the amino acids in wheatgrass can protect you from carcinogens like no other food or medication.

Other benefits include:

  • Increased red blood-cell count and lowers blood pressure
  • Stimulation of the thyroid gland and suppresses appetite
  • Prevents bad breath and promotes  healthy gums

Wheatgrass can be consumed in many different ways; you can find it in capsule form at your local health shop or buy wheatgrass powder and mix it into smoothies or juices. The most common and potent way of consuming wheatgrass would be to put the grass through a juicer and drink a shot of wheatgrass juice (which can be done for you at Kauai or at home if you own a juicer).

As the famous phrase goes nothing good tastes nice, the taste of wheatgrass isn’t for everyone and it does take a bit of getting used to. So here are a few recipes you can try if you’re not brave enough to take a potent shot of wheatgrass but still want the healthy goodness:

Tropical Passion Wheatgrass Smoothie

* 2 kiwi
* 1 guava or papaya
* 1 cup pineapples
* 5 strawberries
* 1 orange
* 2 shots of wheatgrass

 Combine all juices and serve slightly chilled

Sweet Grass Special

* 2 large red apples

*1 large orange

*1 teaspoon certified organic honey

*pinch finely ground cinnamon

* 1 shot of fresh wheatgrass juice

Juice apples and orange in standard juicer. Combine apple, orange and wheatgrass juices in a pitcher and stir to combine. Warm honey until it liquefies and mix into juices. Pour into individual glasses and dust lightly with cinnamon. Enjoy!

Choc Goji & Coconut Protein Balls

Seeing that I am still extremely new to this Eat Clean lifestyle-this is my very first weekend to try and be good with all of the temptations that surround me trying to trap me. I will NOT give in! I’ve decided to share a few recipes I have found that will lure you away from all of the yumminess that surrounds you, that will seriously put you back to square 1! DO YOU REALLY WANT THAT??? I didn’t think so. I found this recipe on http://www.eatclean.co.za and I think it is a great way to add something sweet into your day, so you don’t swerve towards all of the dangerous cakes, cookies, and sweets around you house or at the shop!

INGREDIENTS:

  • 5 dates
  • 2 tablespoons chia seeds
  • 2 tablespoons cocoa powder
  • 1-2 scoops whey protein
  • 10 almonds
  • 2 tablespoons goji berries
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon raw honey
  • 3 tablespoons almond butter
  • 1 teaspoon desiccated coconut
  • 1/4 cup shredded coconut

TELL ME HOW TO MAKE THESE:

  1. Chop dates finely and place almonds in water to soak, once soaked for about 10 minutes-chop almonds up.
  2. Place all ingredients EXCEPT shredded coconut in a food processor and mix, until well combined and a smooth texture.
  3. Roll mixture into balls.
  4. Lightly dip the balls into WARM water and roll in shredded coconut until you’re happy with the coverage.
  5. Place in the fridge for NO LESS than 30 minutes!
  6. Enjoy!!!
